Organic Sea Island Peas
My new favorite and healthy dish to cook at home: Sea Island Peas!
So spicy and full of flavor and all the veggies are so good for you…
1 Cup of organic peas (I prefer Heirloom, you can get them at the Southend farmers market… soak them overnight, or cheat like me and google how to cook peas without soaking them)
3 organic celery stalks (Chopped)
3 organic carrots (Chopped)
1/2 Onion (Thinly chopped)
3 garlic cloves (Sliced)
1-2 tsps of cayenne pepper
1 tsp of red pepper flakes
21 seasoning salut from Trader Joes
Low-sodium, gluton-free chicken broth (Or vegetable broth if you want to go completely vegetarian.)
… and if you love pork, add a small bit of prosciutto when you add the peas.
In a big pot heat some olive oil and sauté the veggies and garlic while seasoning with the peppers and 21 seasoning salut (or a similar seasoning options). After sautéed, add peas and stir to coat. Then add 2-3 cups of broth. Cover pot and lower heat to simmer… cook for 1 to 1 hour 15 minutes.
Accompany with some wine and enjoy!
